
Construction Begins on Exciting New Eatery Opening Beside Canyon’s Iconic Cowboy
Canyon, Texas, is growing at a rapid pace. This great Texas town has been expanding, and it seems that growth isn't slowing down anytime soon.
One of the most iconic pieces of land in Canyon, Texas, is located at Highway 60 and 15th. This is the home of Tex Randall and soon to be the home of Big Tex Burritos!
The Canyon EDC has purchased that land along with the house behind the now torn-down building. But that piece of land is now getting a new life. We mentioned that a new burrito spot was moving into that area, and construction has started.

The first phase of the building began in April. Yes, it looks like a smooth pile of dirt, but soon a building will be erected on that spot.
Big Tex Burritos Will Be Opening Soon in Canyon Next to Tex Randall.
According to the Texas Licensing Department, Big Tex Burritos is coming to 1410 US Highway 60. It will be a pre-manufactured building and is expected to be completed by May 2026. The cost of the building will be around $390,000. The restaurant is another great endeavor by Amarillo entrepreneur Colby Monroe.
Monroe was awarded the Texas Restaurant Association's Outstanding Restaurateur of the Year Award in 2024.
Now he's bringing another great restaurant to Canyon, which will bring much more attention to the iconic Tex Randall.
Who is Tex Randall in Canyon, Texas?
Tex Randall is the famous cowboy who greets guests coming and going into Canyon, Texas. Tex has been a staple of Canyon, Texas, since 1959.

What started as a Western Wear store has evolved over the last 70 years, and eventually, the building next to Tex Randall evolved into a restaurant, and that restaurant evolved into many restaurants over the years. In recent years, the building was known as the El Patio restaurant (yes, it wasn't that in the end, but that's what most people remember). The building was finally torn down in 2024.
