Yes, you can shop till you drop this Labor Day at WestGate Mall.  Look for the mall to be open regular hours, 10a - 9pm, this Labor Day.  And more than likely, look for massive Labor Day sales, because you gotta spend your money on something.

More Great Stores For Shopping

It looks like the vast majority of retail stores will be open this Labor Day.  I've confirmed that Best Buy, Target, Bed-Bath & Beyond, Walmart, Ross, Kohl's, Burlington, and pretty much all the stores around the mall or in the Shops At Soncy will be open.

Convenience Stores

I don't think they ever close, do they?  If they're open on Christmas, I don't see them closing on Labor Day...  I've confirmed that all area Pak-A-Sak stores will be open, as well as Toot N Totum stores.

 

Gyms

It looks like both locations of Gold's Gym will be closed on Labor Day, but Planet Fitness will be open all day, and I do mean all day!

You have other options like area lakes and parks.  They'll probably pretty packed, so you should get there early for a good spot, but if you're trying to avoid the crowd you might avoid them.
