It is true that in life that you don't know what you have until it's gone. The biggest way that I have seen that play out in my life is in the food I grew up loving. When I lived in Chicago I took White Castle for granted.

I thought I could have a delicious slider any time that I wanted. Then I abruptly moved to Texas when I was thirteen. There were not White Castle. How was I to know that was not a thing here. So for many, and I mean many years I grew up missing that taste. Then they became something you could buy in the freezer section. Life was good again. Then I would start travelling and any time I went somewhere with a White Castle I was all in.

Another childhood favorite was something I discovered when I moved to Canyon Texas as a child. The wonderfulness of the Allsup's burrito. They fueled my high school years that was for sure. Most road trips involve Allsup's. I mean you get on the road and every small town in Texas seems to have an Allsup's. It never fails I have to stop at least one to grab a fill up and a burrito. That makes for a great trip.

We finally got a place in Amarillo to get an Allsup's burrito. You have to go to Yesway, on 3rd, but they are here. Yesway, bought the Allsup's after Lonnie Allsup passed away. There have been other changes in those years too.
