As we move further into the summer season and close to school starting we start thinking about fall favorites. We can't wait for Friday Night football. We can't wait for anything pumpkin. Oh, and one of our favorites is the Tri-State Fair. All of the fun, rides, and of course the food.

One fan favorite for years was the St. Matthew's booth. That is where they served up the stuffed sopapillas. Oh, and how we loved those. The hot sauce that they served with the sopapillas was life-changing.

I know many years we would make a trip from work during lunch just so I could get a stuffed sopapilla. Some nights I had to go out to the fair for work and I would bring my daughter home fair food for dinner. She always requested the stuffed sopapilla as well.

St. Matthew's stopped serving them in 2020 when the Pandemic hit and they haven't returned back to the fair since. It was a sad time for a lot of us.  I could drink gallons and gallons of that sauce that they serve with the sopapilla. I promise.

So when I ran across this event happening this weekend I definitely got excited.

While I was chatting with their Pastor, Emanuel Burgos, he told me that they do this sale once or twice a year. This is the first time I ran across this and I couldn't be more excited. They promised me that they would let me know every time they host this event.

Nothing is better than that sopapilla stuffed with meat and potatoes. Unless of course the hot sauce they serve with it. That is just the perfect finishing touch. Of course, with any one-day event like this, I would recommend getting there early. I mean if they sell out they sell out. I hope they do.

Even though you can not enjoy St. Matthew's stuffed sopapillas at the Tri-State Fair anymore it is just great to hear you can still get them every once in a while. The time is here this weekend. Don't miss out.
