There is one property in Amarillo that is in the process of getting some major work done on it. My earliest memories of this property were it being a big purple building that housed Ruby Tequila's on Paramount.

A History of the Property: From Ruby Tequila’s to Joe’s Place

I started my short career of waiting tables in that location back in the nineties. Since then, it has been Joe Daddy's; it had a very short-lived time as a nightclub called Club Nova.

Most recently, it housed Joe's Place, which had some events and let food trucks and other people that needed a commercial kitchen work out of there. They have since closed down as well.

The interesting part is that there has been some work that has started on the building in the past week or so. It got people talking. Is someone new moving in? Is it going to be a restaurant? Will they try to bring another nightclub in?

I have seen a lot of talk on social media that had me convinced that Mac Joe's was moving in.

Mac Joe's has been in their current location in Wellington Square since the nineties as well. Back when they were Macaroni Joe's.  I was working at Gardski's in that same location when I shifted restaurant careers, and Macaroni Joe's was our neighbor.
They have outlived both Ruby Tequila's and Gardski's, but have they reached a point where they are thinking about moving? I actually reached out to the source to either have them confirm or deny the rumor, and I heard back from Colby Monroe:
We have outgrown our current location, and we are excited about our expansion. We are going to be able to fix current operational issues: lack of parking, lines at the bathroom, and a small, dated kitchen. Joe's Place is getting a complete overhaul inside and out-and it will be unique, and unlike anything Amarillo currently offers. The timeline is currently unknown.
So yes, Mac Joe's is moving. It makes sense to have a bigger space and a property that they actually own. This is good news, and we look forward to Mac Joe's making that short move to Paramount Street in the near future.
