When those massive rains came in earlier this summer a lot of businesses on Paramount had to punt. They had to close. They got to reopen for a bit just until more rain came. It was a mess. They were closed again. Oh, and for a long time.

Luckily Lawrence Lake is not as over-flowing as it was. Paramount/Olsen Street has since dried up. Some of the restaurants in the area had to remodel. That much water was sure to cause a lot of damage. Malcolm's took advantage of a much-needed remodel.

Another restaurant that had to close and had to remodel is just finally getting ready to reopen. They have been closed for over a month. Trust me when I tell you that Amarillo has noticed.

Who hasn't missed a good comfort meal from Calico County? Right there in the middle of the flood zone that was Paramount, they took a hit. It looks like they are ready to come back even stronger.

They are officially set to open their doors back up on Thursday. They will be open starting at 7 am for their delicious breakfast. Who is ready?

I know, for one, I am ready for another great chicken fried steak. That is usually what I get. It doesn't matter how often I go in to eat that is my go-to.

I can't wait to see the changes. They remodeled pretty much from the floor up. That's what a nice little flooding can do to help you out. Help you get an unexpected face-lift. I can't wait to get back out and support the staff that has been hurting since the closing. You can't be prepared for that.

I don't know if they were able to keep their staff. I hope that they were. I just know that Calico County has been missed.
