Amarillo is Delighted to See Roll Em Up Taquito’s Finally Open

This really has seemed like a roller coaster of emotions. I feel like we have gone through a lot with Roll Em Up Taquitos already. We found out they were coming to Amarillo back in May.

Now with the news, there was some drama. They were moving into a location but they couldn't tell us where that was. The employees at the former location didn't know they were about to close down.

Then when we found out about them moving into The Catch location on 45th we did learn that their employees were offered a job at Roll Em Up. So that was already some good news. Then the wait was on. We first were told it was happening in August.

There was a lot of work to be done to transform the location into a taquito lover's dream. So we did expect a delay. We have been patient. It's right by our work here at Townsquare Media so I am seeing taquitos wrapped in flour tortillas in my future.

Amarillo is Ready for Some Great Taquitos

That is all I have been dreaming about. Then we started getting excited because the building was finally done. They were starting the hiring process. I could smell those taquitos.

They were hoping to open last week but a few hiccups happened along the way. Then they were shooting for this past Monday but plumbing issues plagued them. They worked furiously trying to get everything ready to go.

Then the good news we have been waiting for:

They are open. We can dine in. We can pick it up. We can even use the drive-thru. I for one can not be more excited. I see a lot of great food in my future.
