When I made the trip to Market Street at the end of last week I did what I always do. I took a trip down the aisle that used to be home to my favorite sauce. The Huy Fong Hot Chili Sauce. I always had a bottle in my refrigerator.

Until I couldn't. A shortage due to a lack of peppers for the recipe caused it. It not only ended the chili paste that I loved but it also kept the sriracha shelves bare too. So it was a surprise to me when I went recently and it was back on the shelf. It had been a long year of hunting and being disappointed.

They never took the signs down. They just left the shelves empty. So we had hoped one day it would be back. When the sriracha came back in November I noticed a difference in the taste. It was just a little bit sweeter.

I was hoping that this would not be the case with this chili paste that I had been waiting forever to have back to pour on my chicken fried rice. This is supposed to be a spicy sauce. So having a hint of sweetness would not be good.

I patiently waited for my to get chicken fried rice like I do every Tuesday from Thai Arawan. I could not wait to get home and try it out.

I add a lot to my rice. I just do. When I am in the restaurant I end up using the whole container on my food. I do the same thing at home. I like it spicy and I would be the first to know if the taste of this new sauce is different.

I am happy to report that I did not taste any sweetness like I did with the sriracha. This was very good news when I told my daughter who also loves this sauce. I love that this one sauce I have been missing so much is the one sauce that I don't notice a difference.

It is still spicy. It still makes me happy to pour as much as I can on my dinner. So here is to many years of this Huy Fong Chili Paste staying on the shelf. It was a long year.
